Copycat Chipotle Carnitas

Instructions

Preheat oven to 300°F.

Season the pork roast with salt and pepper.

Heat oil in a Dutch oven over medium-high heat, then brown the roast for 12 minutes, searing all sides.

Add water or stock, bay leaves, juniper berries, and thyme to the Dutch oven; cover and transfer to the preheated oven.

Braise for 3.5 to 4 hours until tender, flipping the roast once halfway through cooking.

Remove the roast from the oven; discard bay leaves, juniper berries, and thyme.

Once cool enough to handle, shred the meat, removing any bones and excess fat.

Serve warm as a taco filling or with preferred sides.
