Instructions

  1. Preheat oven to 300°F.

  2. Season the pork roast with salt and pepper.

  3. Heat oil in a Dutch oven over medium-high heat, then brown the roast for 12 minutes, searing all sides.

  4. Add water or stock, bay leaves, juniper berries, and thyme to the Dutch oven; cover and transfer to the preheated oven.

  5. Braise for 3.5 to 4 hours until tender, flipping the roast once halfway through cooking.

  6. Remove the roast from the oven; discard bay leaves, juniper berries, and thyme.

  7. Once cool enough to handle, shred the meat, removing any bones and excess fat.

  8. Serve warm as a taco filling or with preferred sides.
