Copycat Chicken Gnocchi Soup Recipe

Instructions

  1. Heat olive oil and butter in a large pot over medium-high heat. Add celery, onions, carrots, garlic, salt, and pepper; sauté 2-3 minutes until vegetables soften.

  2. Stir in flour and cook for 1-2 minutes.

  3. Pour in chicken broth and thyme; bring to a boil.

  4. Add shredded chicken and gnocchi; cook for about 3 minutes until gnocchi is done.

  5. Reduce heat to medium-low. Stir in heavy cream and frozen spinach; cook until spinach warms and soup thickens. Season to taste.
