Copycat Chicken Gnocchi Soup Recipe

Heat olive oil and butter in a large pot over medium-high heat. Add celery, onions, carrots, garlic, salt, and pepper; sauté 2-3 minutes until vegetables soften.

Stir in flour and cook for 1-2 minutes.

Pour in chicken broth and thyme; bring to a boil.

Add shredded chicken and gnocchi; cook for about 3 minutes until gnocchi is done.
