Copycat Chessmen Cookies

A simple butter cookie, made into a copycat version of a classic tea biscuit using a textured rolling pin, yields delightful, shaped treats.

Instructions

  1. Preheat the oven to 350 F and line baking sheets with parchment paper.

  2. Beat butter, sugar, and salt until fluffy, then mix in egg and vanilla.

  3. Incorporate flour into the mixture.

  4. Divide dough, form two disks, wrap, and refrigerate for at least 1 hour.

  5. Combine flour and powdered sugar for dusting. Lightly coat a textured rolling pin with this mixture.

  6. Roll one dough disk on a floured surface to 1/4 inch thick. Roll the textured pin over the dough to create impressions.

  7. Cut cookies along the lines and transfer to prepared sheets.

  8. Brush whisked egg yolks onto the raised edges of each cookie.

  9. Bake for 10 to 12 minutes until edges are lightly golden.

  10. Cool cookies on a wire rack, then store in an airtight container.
