Instructions

  1. Preheat the oven to 375 F.

  2. Combine chocolate cookie crumbs and melted butter; press into a greased 9-inch springform pan, then refrigerate.

  3. For the filling, beat cream cheese, eggs, sour cream, granulated sugar, unsweetened cocoa powder, vanilla extract, and salt until blended.

  4. Mix in red food coloring until fully incorporated.

  5. Pour the filling into the chilled crust and bake for approximately 60 minutes, until the edges are set and the center is slightly loose.

  6. Cool the cheesecake completely on a wire rack, then refrigerate for several hours or overnight.
