Copycat Avocado Egg Rolls Recipe

Instructions

  1. Chop sun-dried tomatoes, then combine with chopped avocado, onion, cilantro, salt, and lime juice in a large bowl.

  2. Place 1-2 tablespoons of filling on each egg roll wrapper, positioned diagonally, then moisten the edges with water.

  3. Fold the bottom corner over the filling, then roll the wrapper while folding in the side corners to enclose the filling tightly.

  4. Continue rolling until completely enclosed, then place on a parchment-lined sheet and repeat for all remaining filling.

  5. Heat oil to 350F in a pot with a 2-inch depth.

  6. Fry 3-4 rolls at a time for 3-4 minutes until golden brown, then remove and drain on a paper towel-lined plate.

  7. Blend all dipping sauce ingredients.

  8. Cut the hot egg rolls diagonally and serve with the blended dipping sauce.
