Copycat Avocado Egg Rolls Recipe
These copycat restaurant-style avocado egg rolls feature a savory blend of fresh avocado, cilantro, red onion, and sun-dried tomato.

Instructions

Chop sun-dried tomatoes, then combine with chopped avocado, onion, cilantro, salt, and lime juice in a large bowl.

Place 1-2 tablespoons of filling on each egg roll wrapper, positioned diagonally, then moisten the edges with water.

Fold the bottom corner over the filling, then roll the wrapper while folding in the side corners to enclose the filling tightly.

Continue rolling until completely enclosed, then place on a parchment-lined sheet and repeat for all remaining filling.

Heat oil to 350F in a pot with a 2-inch depth.

Fry 3-4 rolls at a time for 3-4 minutes until golden brown, then remove and drain on a paper towel-lined plate.
