Instructions

  1. Preheat the oven to 450 F.

  2. Heat 2 cups milk; do not boil. Stir in 4 tablespoons salted butter and 1/3 cup packed brown sugar until dissolved, then cool to 100 F.

  3. Sprinkle 2 teaspoons active dry yeast over the milk mixture and let it soften.

  4. Using a stand mixer with a bread hook, combine 5 cups all-purpose flour and 2 teaspoons salt with the milk mixture until a smooth dough ball forms.

  5. Cover the bowl, let the dough rise for 1 hour until doubled in size, then punch it down.

  6. Turn the dough onto a cutting board and divide it into 10 equal pieces.

  7. Roll each dough piece into a 36-inch rope, then loop it in half, twist the ends 2-3 times, and pull them back over the loop to form a pretzel shape.

  8. Whisk 2 cups warm water and 1/3 cup baking soda in a shallow dish, then dip each pretzel, ensuring both sides are coated.

  9. Place dipped pretzels onto a parchment-lined baking sheet.

  10. Bake for 7-8 minutes until golden brown.

  11. Brush the baked pretzels with 4 tablespoons melted butter and sprinkle with coarse pretzel salt.
