Cooked Moroccan Salad (Taktouka) of Tomato and Roasted Pepper

Instructions

  1. Combine all ingredients in a large skillet. Cook over medium heat, stirring occasionally, for about 20 minutes or until tomatoes are very soft, adjusting heat as needed to prevent burning.

  2. Smash the softened vegetables with a spoon and continue cooking for 10 minutes, reducing liquids until only oil remains.

  3. Serve warm or cold with crusty bread; optionally garnish with fresh chopped parsley or cilantro and a drizzle of olive oil.
