Combine all ingredients in a large skillet. Cook over medium heat, stirring occasionally, for about 20 minutes or until tomatoes are very soft, adjusting heat as needed to prevent burning.

Smash the softened vegetables with a spoon and continue cooking for 10 minutes, reducing liquids until only oil remains.

Serve warm or cold with crusty bread; optionally garnish with fresh chopped parsley or cilantro and a drizzle of olive oil.
