Cooked Caramel Frosting

A simple fudgy caramel frosting, ideal for topping a spice cake, is prepared with brown sugar, corn syrup, vanilla, butter, and cream.

Instructions

  1. Combine all ingredients in a large saucepan and bring to a boil.

  2. Cover and cook for 3 minutes.

  3. Uncover and continue cooking until the mixture reaches 238 F or forms a soft ball in cold water.

  4. Cool for 3 minutes, then beat until thick, spreadable, and no longer glossy.

  5. Apply the frosting to cake layers and sides.
