Instructions

  1. Bring water or broth to a boil in a medium saucepan, then add salt.

  2. Reduce heat to a strong simmer. Slowly whisk grits into the liquid until fully incorporated.

  3. Reduce heat to low and simmer for approximately 1 hour, or until thick and tender.

  4. Stir every 5 minutes to prevent sticking, adding 1/4 cup water as needed.

  5. For an extra creamy texture, stir in butter and heavy cream just before serving.
