Congee Rice Porridge With Shrimp

An easy shrimp congee, or rice porridge, offers a superb comfort food dish suitable for any meal.

Instructions

  1. Place broth and rice in a slow cooker and cook on high for at least 2 hours, or until rice is very soft.

  2. In the last 5 to 10 minutes, add prawns to cook through.

  3. If the mixture becomes too thick, incorporate more broth or water.

  4. Stir in 1 tablespoon fish sauce and ginger; taste and adjust saltiness with up to 2 additional tablespoons of fish sauce, or add 1-2 tablespoons lime juice if too salty.

  5. Ladle into bowls and sprinkle with fresh coriander, basil, and spring onion.

  6. Serve with pepper, red chili sauce, soy sauce, and sesame oil, allowing diners to season to their preference.
