Comforting Vegan Shepherd's Pie

Instructions

  1. Preheat oven to 350 F.

  2. Cook potatoes until soft, then mash with margarine, soy milk, salt, and pepper.

  3. Sauté onion in vegetable oil until tender.

  4. Combine sautéed onion, beef substitute or rehydrated TVP, vegan gravy, peas, corn, garlic powder, and cayenne; pour into a pie pan.

  5. Spread mashed potatoes over the mixture.

  6. Bake for 30 to 40 minutes until heated through.
