Instructions

  1. Start boiling a large pot of water; meanwhile, trim and wash the greens.

  2. Once boiling, add 1 tablespoon of salt and the greens, blanching for 30 seconds to 2 minutes until wilted.

  3. Remove the blanched greens to a colander, rinse under cool water, then chop them.

  4. Boil the pasta in the same pot until tender; drain, reserving 1/2 cup of the cooking liquid.

  5. While the pasta cooks, chop anchovies (if using) and garlic.

  6. Return the pot to medium-high heat; add oil, garlic, pepper flakes (if using), and anchovies (if using), cooking until the garlic is lightly golden.

  7. Stir in the chopped greens, then add the reserved pasta liquid and bring to a boil.

  8. Add the cooked pasta, stir to combine, and bring to a boil again before removing from heat.

  9. Stir in half of the shredded cheese, then taste and adjust salt as desired.

  10. Divide among plates, garnish with the remaining shredded cheese, and serve.
