Instructions
-
Start boiling a large pot of water; meanwhile, trim and wash the greens.
-
Once boiling, add 1 tablespoon of salt and the greens, blanching for 30 seconds to 2 minutes until wilted.
-
Remove the blanched greens to a colander, rinse under cool water, then chop them.
-
Boil the pasta in the same pot until tender; drain, reserving 1/2 cup of the cooking liquid.
-
While the pasta cooks, chop anchovies (if using) and garlic.
-
Return the pot to medium-high heat; add oil, garlic, pepper flakes (if using), and anchovies (if using), cooking until the garlic is lightly golden.
-
Stir in the chopped greens, then add the reserved pasta liquid and bring to a boil.
-
Add the cooked pasta, stir to combine, and bring to a boil again before removing from heat.
-
Stir in half of the shredded cheese, then taste and adjust salt as desired.
-
Divide among plates, garnish with the remaining shredded cheese, and serve.
