Instructions

  1. Start boiling water for soba noodles; cook according to package directions, then rinse with cold water and drain thoroughly.

  2. In a small bowl, combine oil, lime juice, ginger, vinegar, sesame oil, honey, and chili sauce; season with salt and pepper and mix well to create the dressing.

  3. In a large bowl, combine the cooked soba noodles, cucumber, carrot, bell pepper, radish, spring onion, and cilantro.

  4. Add the prepared dressing to the noodle and vegetable mixture, tossing thoroughly to combine; taste and adjust seasoning as needed.

  5. Top with sesame seeds and serve immediately, or refrigerate for up to one day, tossing again before serving.
