Cold Chicken

Instructions

  1. Place chicken tightly in a pot.

  2. Add soy sauce, sugar, star anise, ginger, and enough water to cover the chicken; bring to a rolling boil.

  3. Reduce heat to a medium boil and cook for 20 minutes, ensuring chicken remains covered with water.

  4. Turn off heat, cover pot tightly, and let chicken cool completely within the pot.

  5. Remove and drain chicken, reserving the cooking liquid.

  6. Cut chicken into serving pieces and arrange on a platter, skin-side up.

  7. Pour 1/4 cup of the reserved cooking liquid over the chicken.

  8. Brush with sesame oil and sprinkle with scallions.

  9. Serve at room temperature or chilled.
