Coffee Pot Roast

Instructions

  1. Preheat the oven to 325 F.

  2. Season the chuck roast with salt and pepper. Heat oil in a Dutch oven over medium-high heat, then sear the beef on all sides; remove and set aside.

  3. Reduce heat to medium, add onions and remaining oil, and cook until browned, 7 to 9 minutes. Stir in garlic and thyme for 1 minute, then add coffee and bring to a simmer.

  4. Return the beef to the pot, cover, and braise in the oven for 2 hours, or until very tender.

  5. Remove the beef and keep warm. Strain the pot liquids, discarding excess fat.

  6. Return the strained liquid and onions to the pot over medium heat. Mix flour with water, then stir into the pot and cook until thickened.

  7. Season the sauce as needed and serve with the beef.
