Coffee Mousse

Instructions

  1. Heat evaporated milk and coffee in a saucepan over low heat, stirring until it begins to steam.

  2. Separately, whisk egg yolks and brown sugar in a bowl.

  3. Gradually whisk 1/2 cup of the hot milk into the egg mixture until combined.

  4. Return the egg-milk blend to the saucepan with the remaining hot milk and cook over low heat, stirring constantly, until it reaches 165F.

  5. Remove from heat, stir in softened gelatin, and thoroughly chill the coffee custard.

  6. In another bowl, beat heavy cream until stiff peaks form.

  7. Stir 1/2 cup of the whipped cream into the chilled custard, then gently fold in the remaining cream until fully incorporated with no marbling.

  8. Serve the mousse chilled.
