Coffee Caramels

Instructions

Line an 8x8-inch pan with foil and spray thoroughly with nonstick spray.

Combine sugar, brown sugar, corn syrup, honey, half-and-half, instant coffee, and butter in a medium saucepan over medium-high heat. Stir until butter melts and sugars dissolve.

Insert a candy thermometer and cook, stirring often, until it reaches 250 F.

Remove from heat, stir in vanilla, then pour the caramel into the prepared pan.

Let set at room temperature for 3 hours until firm.

Lift caramel from the pan using the foil, peel off the foil, and cut into squares with a sprayed knife.

Wrap individual caramels in waxed paper and store in an airtight container at room temperature for up to two weeks.
