Instructions

  1. Preheat oven to 350 F. Line and spray 16 muffin tins.

  2. Mash bananas in a small bowl.

  3. In a medium bowl, beat eggs, coconut oil, honey, and brown sugar.

  4. In a separate bowl, combine flour, wheat germ, baking soda, cinnamon, and salt.

  5. Stir mashed bananas into the egg mixture, then add dry ingredients and mix until just combined.

  6. Fill muffin liners with batter and bake for 20 to 25 minutes.

  7. Cool muffins in tins on a wire rack for 10 minutes, then transfer to the rack to cool completely.
