Coconut Infused Jasmine Rice

A quick and low-fat coconut rice dish made with hydrating coconut water and fragrant Thai jasmine rice.

Instructions

  1. Bring coconut water to a boil in a medium saucepan.

  2. Stir in the rice; once boiling again, cover, reduce heat to low, and simmer for 15 to 20 minutes until absorbed and tender.

  3. Remove from heat and let rest, covered, for a few minutes before serving.
