Instructions

  1. Preheat the oven to 325 F.

  2. Spread coconut in a baking pan and toast for 8-10 minutes, stirring frequently, until golden brown.

  3. Meanwhile, melt chocolate in a microwave-safe bowl, stirring every 45 seconds until smooth.

  4. Combine the toasted coconut with the melted chocolate, mixing until the coconut is fully coated.

  5. Drop small spoonfuls onto a parchment-lined baking sheet.

  6. Refrigerate for 30 minutes until the chocolate is set.

  7. Drizzle with caramel, if desired.
