Instructions

  1. Start by simmering chicken and half the leeks in cold water in a large pot for 1 hour until the chicken is tender.

  2. Remove the chicken to cool, then strain the broth into a clean pan, discarding the cooked leeks if desired.

  3. Add rice to the strained broth, cover, and cook for 10 minutes over medium-low heat.

  4. Stir in grated carrots and the remaining leeks, then continue cooking uncovered for an additional 20 minutes.

  5. Season the broth with salt and pepper, reducing liquid further if a more intense flavor is desired.

  6. Chop some of the cooled chicken meat, place it into warmed bowls, and ladle the hot soup and vegetables over the chicken.

  7. Garnish with chopped parsley before serving.
