Instructions

  1. Preheat oven to 300 F and line a baking sheet with a silicone mat or sprayed parchment paper.

  2. Separate eggs, placing whites in one bowl and yolks in another.

  3. Add cream of tartar to egg whites; beat with a hand mixer until stiff peaks form.

  4. Combine cream cheese and salt with egg yolks; beat until smooth.

  5. Gently fold the egg whites into the yolk mixture in three additions, mixing just until combined.

  6. Scoop into 6 to 9 disks on the prepared baking sheet, spaced 2 to 3 inches apart.

  7. Bake for 25 to 35 minutes, or until golden brown, checking frequently after 25 minutes.

  8. Cool on the baking sheet for a few minutes, then transfer to a rack; store leftovers in an airtight container for up to 3 days or freeze.
