Instructions

  1. Start boiling water with the turkey neck, heart, gizzard, onion, and bay leaf in a large saucepan; reduce heat, cover, and simmer for 2 hours to create the stock.

  2. Strain the cooked stock, reserving it, and finely chop the cooked turkey neck, heart, and gizzard.

  3. Once the roasted turkey is removed from its pan and set aside to rest, separate the fat from the pan drippings.

  4. Heat the reserved turkey fat in a large saucepan over medium-high heat; whisk in flour and cook until golden for about 5 minutes.

  5. Gradually whisk in the reserved turkey stock until simmering, then incorporate any browned bits and juices from the roasting pan.

  6. Simmer the gravy for 10 to 15 minutes; then stir in the chopped giblets and sage, and season to taste with salt and pepper.
