Classic Tomate Sauce
A classic mother sauce of cuisine, this rich tomato sauce serves as a base for traditional Spanish and Creole dishes.

Preheat the oven to 300 F.

Tie sachet ingredients into a cheesecloth sack.

Render salt pork in an oven-safe Dutch oven over low heat until fat liquefies.

Sauté carrots, celery, onions, and garlic in the Dutch oven until onions are translucent.

Add tomatoes, ham bone, stock, and the sachet. Bring to a boil.

Cover and transfer the pot to the oven. Simmer, partially covered, for 2 hours.

Remove from oven. Discard the sachet and ham bone. Purée the sauce until smooth.

Season to taste with salt and a small amount of sugar. Serve hot.
