Classic Tiramisu

Instructions

  1. Prepare a double boiler with simmering water. Whisk egg yolks and sugar over low heat for 10 minutes until thickened and dissolved, then remove and cool.

  2. In a stand mixer, beat mascarpone with 3 tablespoons rum until smooth, then beat in the cooled egg yolk mixture.

  3. In a separate bowl, beat heavy whipping cream until stiff peaks form, then gently fold into the mascarpone mixture.

  4. Combine espresso with the remaining 3 tablespoons rum.

  5. Quickly dip half the ladyfingers, one at a time, once on each side in the espresso mixture, then arrange in a single layer in a 9x13 inch baking pan.

  6. Spread half the cream over the ladyfingers layer.

  7. Repeat by dipping the remaining ladyfingers, arranging them in a second layer, and spreading the remaining cream on top.

  8. Cover and refrigerate for at least 4 hours or overnight.

  9. Before serving, dust with cocoa powder.
