Classic Tiramisu
Tiramisu is a classic Italian layered dessert, a rich coffee and cream confection often considered a descendant of the English trifle.

Instructions

Prepare a double boiler with simmering water. Whisk egg yolks and sugar over low heat for 10 minutes until thickened and dissolved, then remove and cool.

In a stand mixer, beat mascarpone with 3 tablespoons rum until smooth, then beat in the cooled egg yolk mixture.

In a separate bowl, beat heavy whipping cream until stiff peaks form, then gently fold into the mascarpone mixture.

Combine espresso with the remaining 3 tablespoons rum.

Quickly dip half the ladyfingers, one at a time, once on each side in the espresso mixture, then arrange in a single layer in a 9x13 inch baking pan.

Spread half the cream over the ladyfingers layer.

Repeat by dipping the remaining ladyfingers, arranging them in a second layer, and spreading the remaining cream on top.

Cover and refrigerate for at least 4 hours or overnight.

Before serving, dust with cocoa powder.
