Classic Thai Fish Cakes

Instructions

Rinse and pat dry fish, then cut into chunks and place in a food processor.

In a separate bowl, combine coconut milk, fish sauce, chili powder, cumin, coriander, and brown sugar; pour over the fish.

Add 1/2 cup breadcrumbs, lime leaf strips, green onion, galangal or ginger, garlic, and chili pepper to the processor. Pulse until combined, adding more breadcrumbs if needed to achieve a consistency suitable for forming cakes.

Form the mixture into small cakes, approximately 2 inches in diameter and 3/4- to 1-inch thick.

Chill cakes for 10 minutes. While chilling, pour at least 1-inch of oil into a frying pan and begin preparing garnishes.

Heat oil until hot, then fry cakes for 30 seconds to 1 minute per side until golden brown. Drain on paper towel.

Serve immediately with cucumber, Thai sweet chili sauce, fresh cilantro, and lime wedges.
