Instructions

  1. Preheat the oven to 350°F and grease an 8-inch square baking dish or 1 1/2-quart casserole.

  2. Combine 3/4 cup cornmeal and 1 teaspoon salt.

  3. Gradually whisk in 1 cup boiling water until smooth, then stir in 3 tablespoons melted unsalted butter and cool for 5 minutes.

  4. Whisk 1 cup milk into the cornmeal mixture.

  5. In a separate bowl, beat 2 large eggs, then whisk them into the cornmeal mixture with 2 teaspoons baking powder until well blended.

  6. Pour the batter into the prepared baking dish.

  7. Bake for approximately 35 minutes, until set and lightly browned.
