Preheat the oven to 350°F and grease an 8-inch square baking dish or 1 1/2-quart casserole.

Combine 3/4 cup cornmeal and 1 teaspoon salt.

Gradually whisk in 1 cup boiling water until smooth, then stir in 3 tablespoons melted unsalted butter and cool for 5 minutes.

Whisk 1 cup milk into the cornmeal mixture.

In a separate bowl, beat 2 large eggs, then whisk them into the cornmeal mixture with 2 teaspoons baking powder until well blended.
