Pat shrimp dry; season with salt and pepper.

Heat olive oil in a large skillet over high heat.

Add shrimp and sauté for 1-2 minutes, until halfway cooked.

If using, add wine and simmer until reduced by half.

Stir in cold butter, reduce heat to medium, and cook for 1 minute until shrimp are fully cooked.
