Classic Shrimp Creole

Instructions

  1. Make a golden roux by cooking oil and flour in a Dutch oven over medium heat for 15-20 minutes, stirring constantly.

  2. Stir in onion, celery, green onions, green pepper, and garlic; cook for at least 15 minutes until vegetables are tender, stirring often.

  3. Incorporate diced tomatoes, tomato sauce, tomato paste, water, salt, black pepper, cayenne pepper, bay leaves, lemon juice, Worcestershire sauce, and hot sauce, then bring the mixture to a boil.

  4. Cover, reduce heat, and simmer for 1 hour, stirring occasionally.

  5. Add shrimp and continue to simmer for 10 minutes, or until the shrimp are pink and cooked through.

  6. Remove bay leaves and stir in fresh parsley.

  7. Serve the Creole over hot cooked rice.
