Classic Sauce Robert
A classic French sauce, Robert features onions, mustard, and white wine simmered into a rich demi-glace.

Instructions

Dissolve sugar in lemon juice; set aside.

Melt butter in a saucepan and cook onions over medium heat until soft and translucent.

Add wine, bring to a boil, then simmer until the liquid reduces by two-thirds.

Stir in demi-glace and simmer for 10 minutes.

Strain the sauce through a mesh strainer.

Mix in mustard and the reserved sugar-lemon mixture, then serve.
