Classic Salmon Patties

Instructions

  1. Melt 2 tablespoons butter in a large skillet over low heat.

  2. In a medium bowl, flake canned salmon and its liquid, discarding skin and large bones. Thoroughly blend in grated onion, parsley, and pepper.

  3. Incorporate beaten eggs, then add 1/2 to 3/4 cup breadcrumbs until the mixture is sufficiently firm to form 12 small patties.

  4. Roll each patty in the remaining breadcrumbs for coating.

  5. Place patties into the hot skillet and fry slowly until one side is browned. Add the remaining butter, then flip and continue frying until the other side is browned.
