Classic Roast Prime Rib of Beef Au Jus

Instructions

  1. Preheat the oven to 450 F.

  2. Place the prime rib in a large roasting pan, then rub it with butter and coat evenly with salt and pepper. Let the roast stand at room temperature for 2 hours.

  3. Sear the prime rib in the hot oven for 20 minutes.

  4. Reduce the oven temperature to 325 F and continue roasting until the desired internal temperature is achieved, approximately 15 minutes per pound for medium-rare.

  5. Transfer the roast to a platter, loosely tent with foil, and let it rest for 30 minutes before serving.

  6. Pour off all but 2 tablespoons of fat from the roasting pan and place it on the stovetop over medium heat.

  7. Add flour and cook, stirring, for 5 minutes to form a roux.

  8. Whisk in beef broth, scraping all caramelized drippings from the pan. Increase heat to high and cook, whisking often, for 10 minutes until the sauce reduces and thickens slightly.

  9. Adjust the seasoning, strain the au jus, and serve alongside the prime rib.
