Instructions

  1. Start boiling red-skinned potatoes in salted water for 10 to 15 minutes until tender, then drain and cool completely.

  2. In a large bowl, combine the cooled potatoes, eggs, celery, cucumber, and onion.

  3. Stir in 3/4 cup mayonnaise, relish, and mustard, adding more mayonnaise, salt, and pepper to taste.
