Classic Rasgulla: A Delicious Indian Dessert

Instructions

  1. Start boiling milk over medium heat, stirring occasionally to prevent burning.

  2. Add lime juice to the boiling milk and mix well.

  3. Once curds separate, turn off the heat and let the milk sit for 10 minutes.

  4. Strain the cheese, then wash it thoroughly under running water.

  5. Place the cheese in a cheesecloth and hang it for 1 hour to drain completely.

  6. Knead the drained cheese in a bowl until it is smooth and lump-free.

  7. Mix flour into the kneaded cheese thoroughly.

  8. In a large pressure cooker, combine sugar and water, then bring the mixture to a boil uncovered.

  9. While the syrup boils, roll the cheese dough into small, smooth, marble-sized balls.

  10. Carefully add the cheese balls to the boiling sugar syrup.

  11. Cover the pressure cooker, add the weight, and cook for 8 to 10 minutes after the first whistle.

  12. Release the steam, then allow the Rasgullas to cool completely in the cooker.

  13. Pour rose water over the cooled Rasgullas.

  14. Chill for several hours before serving.
