Instructions

  1. Preheat the oven to 350 F and prepare a baking sheet with parchment or grease.

  2. Cream shortening and sugars in a large bowl until light and fluffy.

  3. Beat in eggs until well blended, then mix in vanilla.

  4. Whisk together flour, baking soda, baking powder, and salt in a separate bowl.

  5. Gradually add the flour mixture to the creamed mixture.

  6. Fold in cornflakes, oats, coconut, and optional chocolate chips.

  7. Drop dough by spoonfuls onto the prepared baking sheet.

  8. Bake for 12 to 14 minutes.
