Classic Plum and Almond Tart

Instructions

  1. Preheat the oven to 350 F (175 C).

  2. Lightly grease a 9-inch loose-bottom tart tin, roll out pastry, line the tin, trim excess, and chill.

  3. Cream butter and sugar until fluffy, then gradually whisk in beaten eggs with vanilla extract.

  4. Sift flour into ground almonds, then fold this mixture into the creamed ingredients until combined.

  5. Spoon the almond cream into the chilled pastry case and spread evenly.

  6. Halve and slice plums, then arrange them in circles on top of the almond cream, pressing gently.

  7. Bake for 45-50 minutes until the pastry and filling are golden and cooked.

  8. Cool the tart in the tin for 15 minutes before carefully removing and serving.
