Start simmering 1 inch of water in a medium saucepan.

In a separate metal bowl, whisk egg yolks and sugar for 2 minutes until smooth, then whisk in lemon juice and zest.

Place the bowl over the simmering water, ensuring it does not touch the water, and cook with constant stirring for 7 to 10 minutes until the mixture thickens, coats the back of a spoon, and reaches 170 F.

Remove the bowl from the heat and gradually whisk in butter, one slice at a time, until each piece is almost dissolved.

Spoon the lemon curd into clean containers, cover its surface directly with plastic wrap, and refrigerate once it cools to room temperature.
