Instructions

  1. Start simmering 1 inch of water in a medium saucepan.

  2. In a separate metal bowl, whisk egg yolks and sugar for 2 minutes until smooth, then whisk in lemon juice and zest.

  3. Place the bowl over the simmering water, ensuring it does not touch the water, and cook with constant stirring for 7 to 10 minutes until the mixture thickens, coats the back of a spoon, and reaches 170 F.

  4. Remove the bowl from the heat and gradually whisk in butter, one slice at a time, until each piece is almost dissolved.

  5. Spoon the lemon curd into clean containers, cover its surface directly with plastic wrap, and refrigerate once it cools to room temperature.
