Classic Kosher Potato Kugel Recipe (Pareve)

Instructions

  1. Preheat oven to 400 F (200 C) and oil a 13x9x2-inch baking dish.

  2. Coarsely grate potatoes and onions using a box grater or food processor.

  3. Let the grated mixture stand for 3 to 5 minutes, then squeeze out excess liquid.

  4. In a large bowl, beat eggs, oil, flour, salt, and pepper; then mix in the grated potatoes and onions until smooth.

  5. Pour the kugel batter into the prepared dish and smooth the top.

  6. Bake uncovered for about 1 hour until golden brown, or until a knife inserted into the center comes out clean.

  7. Cool slightly before cutting into squares and serving.
