Classic Korean Bibimbap

Bibimbap is a Korean rice dish featuring an array of seasoned vegetables and typically served with spicy gochujang sauce.

Instructions

  1. Cook the rice.

  2. Salt cucumbers with 1/2 teaspoon, let stand 20 minutes, then rinse and drain.

  3. Start boiling a medium pot of water. Blanch mung beans for 30-60 seconds, then drain, cool, squeeze excess water, and season with 2 teaspoons sesame oil, 1/2 teaspoon salt, and a dash of sesame seeds.

  4. Return water to boil. Cook spinach 1-2 minutes until wilted, then drain, cool, squeeze excess water, and season with 2 teaspoons sesame oil, 1/2 teaspoon salt, and sesame seeds.

  5. Sauté carrots with a dash of salt in oil over medium-high heat for 2 minutes until tender-crisp; set aside.

  6. Sauté mushrooms with a dash of salt for 5 minutes until soft and lightly browned; set aside.

  7. Sauté zucchini with a dash of salt for 4 minutes until tender.

  8. Arrange cooked rice in a large bowl, topped with prepared vegetables.

  9. Optionally, add beef, egg, or both to the center.

  10. Serve with gochujang and sesame oil.
