Classic Italian Potato Gnocchi

Italian-style potato dumplings, or gnocchi, are simple to prepare at home using this recipe.

Instructions

  1. Start boiling water in a large pot fitted with a steamer insert.

  2. Steam potatoes for 30 to 40 minutes until tender, then pass them through a food mill or ricer.

  3. Combine riced potatoes with half the flour on a lightly floured surface, then knead the mixture, gradually adding more flour until the dough is smooth.

  4. Cut the dough into sections, roll each piece into a 1/2-inch cylinder, and then cut into 3/4-inch pieces.

  5. Shape each gnocchi piece by pressing it between your thumb and a fork to create an imprint.

  6. Bring a large pot of generously salted water to a boil.

  7. Drop the gnocchi into the boiling water, cook for 2 minutes until they float, then continue cooking for an additional 15 seconds.

  8. Skim the cooked gnocchi from the water, drain well, and serve immediately.
