Instructions

  1. Heat 6 tablespoons olive oil in a large pot over medium-high heat.

  2. Add 1 1/2 pounds sliced bell peppers and 1 large sliced red onion; cook, stirring, for 5 to 7 minutes until nearly soft.

  3. Stir in 4 sliced garlic cloves, 2 teaspoons salt, 1 tablespoon Italian seasoning, and 1/2 teaspoon black pepper; cook for another 5 minutes, stirring.

  4. Add one 28-ounce can crushed Italian tomatoes, 1 teaspoon white wine vinegar, and 1/2 cup fresh basil leaves; stir thoroughly.

  5. Cover and simmer on low for about 15 minutes until peppers are soft. Let cool slightly before serving.
