Instructions

  1. Combine chopped tomatoes, cucumbers, bell pepper, and scallions in a large bowl.

  2. Just before serving, toss with olive oil, lemon juice, salt, and black pepper; taste and adjust seasoning as needed.

  3. Store any remaining salad in the refrigerator for 2 to 3 days.
