Classic Hot Chicken Salad

Instructions

  1. Preheat the oven to 425 F and butter a 2-quart baking dish.

  2. In a bowl, combine cubed chicken, celery, mayonnaise, toasted almonds, lemon juice, and chopped onion; add salt if needed.

  3. Stir 1/2 cup toasted breadcrumbs into the chicken mixture.

  4. Spoon the chicken mixture into the prepared baking dish.

  5. Sprinkle with shredded cheese.

  6. Toss the remaining 1 cup toasted breadcrumbs with melted butter and sprinkle over the cheese layer.

  7. Bake the casserole for 15 to 20 minutes until browned and bubbly.

  8. Serve hot, with optional garnish.
