Instructions

  1. Cook breakfast sausage in a skillet over medium-low heat, breaking it up; remove with a slotted spoon to a paper towel-lined plate, reserving drippings.

  2. Add shortening or lard and flour to the reserved drippings; cook, stirring, for 2 minutes until blended and bubbly.

  3. Gradually stir in 1 1/2 cups milk; cook until thickened and bubbly.

  4. Return the crumbled sausage to the gravy. Season with salt, pepper, and optional cayenne; add more milk if needed for desired consistency.

  5. Serve hot over split, buttered biscuits.
