Classic Homemade Falafel

Instructions

  1. Soak dried chickpeas in cold water overnight.

  2. Drain soaked chickpeas, then boil them in fresh water for 5 minutes; reduce heat and simmer for 1 hour until firm.

  3. Drain chickpeas and cool for 15 minutes.

  4. Combine cooled chickpeas, onion, garlic, parsley, cumin, coriander, salt, pepper, and flour; mash or process until a thick paste forms.

  5. Form the mixture into slightly flattened, ping-pong sized balls.

  6. Heat 2 inches of oil in a pot to 350 F.

  7. Fry falafel balls in the preheated oil for 5 to 7 minutes until golden brown; drain and serve hot.
