Classic Homemade Falafel
An authentic Middle Eastern recipe for classic falafel, prepared from dried chickpeas.

Instructions

Soak dried chickpeas in cold water overnight.

Drain soaked chickpeas, then boil them in fresh water for 5 minutes; reduce heat and simmer for 1 hour until firm.

Drain chickpeas and cool for 15 minutes.

Combine cooled chickpeas, onion, garlic, parsley, cumin, coriander, salt, pepper, and flour; mash or process until a thick paste forms.

Form the mixture into slightly flattened, ping-pong sized balls.

Heat 2 inches of oil in a pot to 350 F.

Fry falafel balls in the preheated oil for 5 to 7 minutes until golden brown; drain and serve hot.
