Instructions

  1. Flatten chicken breasts to an even thickness.

  2. Brush flattened chicken with olive oil seasoned with salt and pepper.

  3. Heat a griddle pan and cook chicken for 6 minutes per side, pressing to create grill lines.

  4. Remove chicken from the pan, place on a plate, cover, and let rest.

  5. To make the dressing, blend garlic and anchovies. Add egg yolk, Dijon mustard, and lemon juice, then slowly whisk in olive oil until thick and creamy; season to taste.

  6. Shred the rested chicken.

  7. Combine shredded chicken with Romaine, Parmesan, and a sufficient amount of dressing; mix gently and divide into eight portions.

  8. Fill each wrap with chicken salad, fold the bottom, and roll tightly. Serve immediately.
