Classic Fried Whitebait (Fried Tiny Fish)

Instructions

  1. Heat 2 cups of oil in a heavy, high-rimmed pan to 350 F.

  2. Inspect 1 pound of whole fish, discarding any that are not pristine.

  3. Combine 1 cup all-purpose flour and 1 tablespoon salt in a shallow bowl.

  4. Lightly coat the fish in the seasoned flour, shaking off any excess.

  5. Fry the fish in batches for 2 to 3 minutes, stirring until golden brown and crispy.

  6. Drain the fried fish on a rack or paper towels; if making a large quantity, keep warm in an oven set to warm. Serve hot with lemon wedges.
