Classic Fried Green Tomatoes Recipe

Instructions

  1. Preheat a low oven to keep fried tomatoes warm.

  2. Slice green tomatoes 1/4 to 1/2 inch thick, season with salt and pepper, let stand 10-15 minutes, then pat dry.

  3. Heat 1/2 inch shortening, bacon drippings, or oil in a large skillet over medium heat until 360F.

  4. Beat eggs in one shallow bowl; place cornmeal in another. Dip tomato slices first in egg, then in cornmeal to thoroughly coat.

  5. Fry coated tomato slices in batches without overcrowding until golden brown on both sides, about 3 minutes per side.

  6. Drain fried tomatoes on paper towels, transfer to a cooling rack, sprinkle with salt, and keep warm in the preheated oven.

  7. Serve with desired sauce.
