Classic French Tarte Aux Pommes

Instructions

Preheat oven to 400 F (200 C).

Combine flour, sugar, and salt; cut in chilled butter until crumbly.

Add 2-3 tablespoons cold water, mixing until dough just holds together.

Form dough into a disk, wrap, and chill for several hours.

For frangipane, cream butter and sugar. Mix in almond meal, egg yolk, vanilla, and flour until combined. Refrigerate.

Roll chilled dough into an 11-12 inch, 1/8-inch thick circle.

Fit dough into a 9-10 inch tart pan, trim excess, and chill for 20 minutes.

Place tart pan on a baking sheet. Spread frangipane in the shell, arrange apple slices over it, and bake for 12-15 minutes until crust is golden.

Reduce oven to 350 F (175 C) and bake for 20-30 more minutes until apples are tender and frangipane is set.

Cool tart for 10 minutes, then brush warm apples with melted apricot jelly and serve at room temperature.
