Classic French Tarte Aux Pommes

Instructions

  1. Preheat oven to 400 F (200 C).

  2. Combine flour, sugar, and salt; cut in chilled butter until crumbly.

  3. Add 2-3 tablespoons cold water, mixing until dough just holds together.

  4. Form dough into a disk, wrap, and chill for several hours.

  5. For frangipane, cream butter and sugar. Mix in almond meal, egg yolk, vanilla, and flour until combined. Refrigerate.

  6. Roll chilled dough into an 11-12 inch, 1/8-inch thick circle.

  7. Fit dough into a 9-10 inch tart pan, trim excess, and chill for 20 minutes.

  8. Place tart pan on a baking sheet. Spread frangipane in the shell, arrange apple slices over it, and bake for 12-15 minutes until crust is golden.

  9. Reduce oven to 350 F (175 C) and bake for 20-30 more minutes until apples are tender and frangipane is set.

  10. Cool tart for 10 minutes, then brush warm apples with melted apricot jelly and serve at room temperature.
