Classic French Spinach au Gratin

Instructions

  1. Preheat the oven to 375 F and butter a gratin dish.

  2. Sauté onion in olive oil for 5 minutes, then sprinkle flour over it and continue sautéing for 30 seconds.

  3. Stir in salt, pepper, dried thyme, and spinach; cover the pan and wilt the spinach on low heat for 3 minutes.

  4. Mix milk and heavy cream into the spinach, then transfer the mixture to the prepared gratin dish.

  5. Combine melted butter, bread crumbs, and 1/4 cup Parmesan cheese, then sprinkle this over the gratin.

  6. Bake for 15 to 20 minutes until hot, bubbly, and golden brown.
